This beautiful hand forged San Mai kitchen knife is all handmade in East Yorkshire by Dr Zech. It has a core hardness of 62hrc with a soft iron cladding on either side of the core. It is an excellent kitchen companion suitable for finely slicing vegetables and all meats. It would also fair well for deboning fish and chicken, though it is not recommended for cutting through large bones or frozen food as this would chip the blade. It features a turned handle of reclaimed teak with Japanese tang.

  • This hand forged kitchen knife by Dr Zech is made from Japanese Takefu San Mai high carbon steel with a Japanese style tang. This steel features 3 layers. The outer layers are soft iron sandwiching a core of Blue Paper Steel, which is known for its high strength and edge retention due to the added cobalt. This is a highly reactive steel, it is NOT stainless, hand wash and dry immediately after use and wipe on cooking oil before storage.
  • It features a 2mm thick blade with a flat grind.
  • The handle of this kitchen knife is extremely unusual as Dr Zech took a different approach making a turned handle. It is surprisingly comfortable to hold and the pommel end has been caulked and made more oval for a more secure grip. The wood primarily consists of reclaimed teak with bog oak and padauk accents.
