Below are some infographics of common Japanese type kitchen/chef knives. These are ones Dr. Zech is most familiar with and the styles here can be modified into full tanged versions or more exotic or westernised versions. By no means are these an exhaustive list and there are loads of information out there on Google if you wish to know more before purchasing a creation by Dr. Zech.
